Ingredients

  • 2 slices of dry-cured ham
  • 7 eggs
  • 1 onion
  • 1 pinch ground nutmeg and salt
  • 200 g BuzzyBite Classic tortilla crisps 
  • 6 tablespoons olive oil

Step by Step Instructions

Step 1

Make a few small holes in your packet of crisps and crush them. Pour the contents into a large salad bowl.

Step 2

Peel your onion and cut into small pieces. Cook them in a frying pan with a third of the olive oil.

Step 3

In the meantime, cut your hams finely into small squares and add them to the crisps. Once the onions are cooked, add them to the salad bowl.

Whisk the eggs, add the nutmeg, salt and chopped coriander. Beat until frothy.

Step 4

Put the mixture into the bowl and stir gently to moisten all the ingredients.

Put into a small frying pan containing at least 2-3 mm of olive oil.

Step 5

Cook over a medium heat, spreading the edges of your tortilla with a heatproof spatula and pressing it down to give a smooth surface, for 2-3 minutes, depending on how golden you prefer your tortilla.

Turn the tortilla over, placing a plate on the pan (be careful, hot oil is hot, just like our BuzzyBite Crisps) and cook on the other side.
