Ingredients

  • 200 g Classic BuzzyBite Tortilla crisps 
  • 150 g grated cheese (cheddar or Mexican mix)1 ripe avocado, mashed
  • 1 small tomato, diced
  • 100 g corn kernels
  • 1 tomato (diced)
  • 1/2 red onion (finely chopped)
  • 1 avocado (diced or purĂ©ed for guacamole)
  • 2 tablespoons cream or Greek yoghurt
  • 1 jalapeno pepper (sliced, optional)
  • Fresh coriander (for garnish)

Step by Step Instructions

Step 1

Preheat the oven:Turn your oven on to 200°C (400°F).
Place a sheet of greaseproof paper on a baking tray.

Step 2

Arrange the crisps: Spread the crisps evenly on the baking tray, making sure they overlap slightly.

Step 3

Add the toppings: Divide the kidney beans and corn between the crisps.
Add the diced tomatoes and chopped onions.
Sprinkle with grated cheese to cover generously.

Step 4

Cooking time: Place in the oven for 8 to 10 minutes, until the cheese is melted and lightly browned.

Step 5

Garnish and serve: Remove the baking tray from the oven. Add the diced avocado (or guacamole), cream and jalapeño slices.
Sprinkle with fresh coriander. Season with a pinch of cumin, salt and pepper.
